Any meat left on the joint/bird pulled off and shredded. Any leftover veg including roasties. Whatever curry spices you like - mine are cumin, paprika, turmeric and I've put in coriander leaf as well as I couldn't find either the ground coriander or cinnamon. A paste or powder works very well. Fry up an onion (finely chopped) with some garlic and ginger to taste in a big pan. Toss in the curry powder or paste and fry up. I added mushrooms at this point 'cos I like 'em. Then tip in a big tin of tomatoes then half fill the tin with water and add that to the pan. Add a tin of green beans or whatever beans you like. It doesn't feel like a curry without beans in it somehow. Bung in the leftover meat and veg. Salt and pepper to taste.
Leave to cook for however long it takes the rice to cook. I usually put a chicken stock cube in with the rice once the water's boiling. Or in my case, some reduced salt bouillon.
