Soup

Tonight OH raved about a home made, thickened vegetable soup. I softened onion, carrot and celery, added a handful of red lentils, stirred in a tbs of flour and let it cook before adding vegetable stock and some Worcestershire sauce. I enjoyed it a great deal as well.

Little bear refused to even touch it. Instead he had cold, tinned tomato soup. It was either that or he went to bed hungry.

And yes, it was him who insisted on the soup being cold.

Do you like pumpkin soup? I recently harvested our pumpkins and we've got 4. I could bring one over for you if you like.

Last year I made pumpkin and parsnip soup. The diced flesh of a pumpkin, 3 or 4 parsnips, also chopped up, with onions (might have had celery in as well) fried in butter and olive oil, the pumpkin and parsnips fried a little, then 2 litres of boiling water added, together with 2 stock cubes, salt, pepper, white wine vinegar.

Boiled the veg until cooked and then whizzed it all up in the stock pan with a hand blender. It was gorgeous, very filling served with fresh wholemeal bread.
